I learned about @fairviewmeadowfarm this past spri I learned about @fairviewmeadowfarm this past spring and have looked forward to picking up my family’s order each month since. Supporting farmers who have a passion for quality and a heart for being good stewards of the Earth is so important. Today I was honored to walk the farm with Nate and see and hear firsthand the beauty and importance of what they do. Thank you, Nate, for your time today! #regenerativeagriculture #fairviewmeadowfarm #knowyourfoodsource #knowyourfarmer #grassfedbeef #grassfed #breathingandcooking
The beauty of eating fresh vegetables in season is The beauty of eating fresh vegetables in season is that their colors and flavors and textures are exactly as nature intended them to be. They haven't traveled miles and miles before they get to your plate.

I saw a little handwritten sign on the side of the road yesterday on my way to make a delivery- "Asparagus"- and I made a mental note to stop by on my way back home. When I pulled in there was a blue cooler and an old metal toolbox on a folding table outside a small shed. I opened the cooler and grabbed 2 beautiful purple and green bundles of asparagus with flecks of soil speckled on the ends of their freshly cut stalks and put $6 in the toolbox. There is something I love so much about the simplicity and trust involved in that kind of transaction ❤️. I decided last minute not to cook them...they were so fresh...I wanted to experience them as close to their natural state as possible. I recalled a recipe I'd heard @markbittman recite on his podcast that was one of those no-need-to-measure, simple tributes to in-season produce and am pretty sure this is how it went. It was delicious. And simple. And something I highly recommend you make very soon while asparagus is at it's tender-crisp-sweet perfection....

Cut the tips from the asparagus (halve them if they're large) and place in a bowl. Shave the outer layer of each stalk with a vegetable peeler and place in the bowl with the tips. Slice the peeled stalks thinly on the diagonal and add to the bowl with everything else.

Drizzle with some good olive oil (I used a walnut-olive oil blend), squeeze some fresh lemon over and toss.

season with flaky sea salt and a few twists of coarse pepper. Shave parmesan over top (don't grate it, shave it, it's just better that way) and toss again gently.

That's it. Asparagus perfection in just a few minutes with just a few ingredients 🥰

Thank you Mark for the recipe (or the inspiration if this isn't exactly how it went)! #asparagus #asparagusrecipe #rawasparagus #eatingseasonally #markbittmanrecipe #breathingandcooking

How do you start your day? My favorite way to "bre How do you start your day? My favorite way to "break the fast" almost always includes some combination of egg 🍳+ green 🌱🥑 ...this morning was seeded toast smeared with avocado, topped with wilted arugula from @fairviewmeadowfarm, crunchy yellow pea tendrils from @farmerjonesfarm and a gorgeous, bright-orange-yolked, pasture raised egg from my daughter's flock. And while I ate it I practiced quiet mindfulness and I swear I could taste the sunshine and the rain and the rich soil and the care that brought that food to my table. I'm so thankful for the people I've come to know personally who value the beauty and the wisdom of growing and raising food in harmony with nature ❤️

Last week I had beautiful rainbow carrots in the crisper, some leftover feta cream sauce from dinner the night before and a little jar of homemade pistachio butter I'd been using on everything from salads to a fried egg and roasted tomato tartine. It seemed natural to put them all together and the result was not only delicious- it was really beautiful, too 😍. I made it again last night to serve alongside our Easter lamb, Hannah's Challah bread and roasted fennel with potatoes- and there wasn't a carrot left! Now that I've made it twice, I can't wait to share it with you...I'll be posting it on the blog this week and I hope you love it as much as we do! #rainbowcarrots #eattherainbow #pistachiobutter #holidaysides #roastedcarrots #eatyourveggies #pistachios #breathingandcooking
We enjoyed two Easter get togethers this weekend.. We enjoyed two Easter get togethers this weekend...last night's dinner was at our house and starred this yogurt marinated leg of lamb with cardamom and orange and OMGosh...sooooo good! Recipe from @markbittman and local lamb from @kellermeats_exchangemarket. The roast smelled divine as it cooked, developing a gorgeous super-flavorful crust while the inside came out perfectly pink, tender and succulent. The recipe is pretty hands off which left us with plenty of time for sipping mimosas while the grandkids searched for eggs. We served slices drizzled with a fresh herb salsa made with mint, oregano and parsley (You can find the lamb recipe on markbittman.com) #legoflamb #easterdinner #familydinner #markbittman #localfood #breathingandcooking

We had the best shrimp 🍤 and grits last summer We had the best shrimp 🍤 and grits last summer in Nashville and I have been craaaaving those flavors all week… last night I savored some kitchen therapy and worked on my own version. Juicy shrimp, spicy andouille, colorful bell peppers, creamy white cheddar polenta (I can feel the grits purists out there giving me the side eye 🙄) and watercress micro greens 😍 …it was soo good BUT I’ve got some ideas swirling around in my mind to make it even better before it hits the blog. I don’t think anyone in our house is going to mind 🤤 if we have it again very soon #shrimpandpolenta #shrimpandgrits #shrimp #andouille #watercress #breathingandcooking

This salad? 😍😍 I’ll be posting the recipe This salad? 😍😍 I’ll be posting the recipe on the blog soon… but I couldn’t wait another minute to share a picture here. I started with a layer of home made pistachio butter, topped with a bed of super flavorful mixed greens from @fairviewmeadowfarm, the last of my beets from @farmerjonesfarm (roasted and sliced super thin), juicy cara cara oranges and creamy burrata (are you hungry yet???)… then sprinkled generously with chopped pistachios and fresh herbs, and drizzled with an espresso- balsamic vinaigrette.
